XO Cafe Patron Cupcakes I The Best In All The Land

I found/invented the best cupcakes in all the land…and what does it include?? Tequillla! Yum. What else does it include?? Coffeeeee. Yumm-er!

Ladies and gents I introduce to you {{drumroll please}} XO Cafe Patron Cuppy Cakes!

I got this big ol’ bottle of xo Cafe Patron tequila [coffee-tequila basically] awhile ago when I had to do a tequila tasting at work (hard work, I know) and the representative of this fab tequila gave me the whole bottle because he knew I was a baker and could make something mouth watering out of it…and let me tell you, I did just that.

Disclaimer: I put a healthy-ish spin on them because I can’t be posting skinny how-to’s then turn around and tempt you with throw-your-diet/life/bod away- completely cupcakes but I recommend you don’t practically eat them all yourself like I did. Shhh.

So without further adieu, this is how I made XO Cafe Patron Cupcakes {{Adapted from here}}:

Chocolate Cupcakes

1 ½ cups 100% white whole wheat flour

⅓ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup sugar

½ cup coconut oil

1 cup cold coffee

2 teaspoons pure vanilla extract

1/4 cup Patron XO Cafe liqueur


1  sticks unsalted butter, softened

3 cups organic powdered sugar, sifted

1/4 cup Patron XO Cafe

2 tsp. pure vanilla extract

Pinch Kosher salt

{{Cue you asking yourself what I did to make these healthy}} Well, you’d be surprised at how much I did cut out…

Step #1: Get your proper ingredients.

Step #2: Line your cupcake pan {{makes 12}}.

Step #3: Preheat your oven to 375 degrees F. Mix your 1 ½ cups flour, ⅓ cup unsweetened cocoa powder, 1 teaspoon baking soda, ½ teaspoon salt and 1 cup of sugar together in one bowl with a whisk.

Step #4: Mix the liquids together ½ cup coconut oil, 1 cup cold coffee, 2 teaspoons pure vanilla extract and 1/4 cup Patron XO Cafe liqueur {{note: when using coconut oil, the consistency changes based on temperature, so as you can see in the middle bottom picture below, the cold coffee made the oil get hard…I nooked it in the microwave for 20 seconds and patiently mixed it together until it was mixed thoroughly!}}

Step #5: Mix the liquids and the dry ingredients together with an electric mixer or by hand.

Step #6: Fill cup cake liners with batter.

Step #7: Set your timer for 25 minutes and place in a 375 degree F oven for baking.

 Step #8: Take cupcakes from oven and poke holes in the top with a knife. Next, paint some XO Cafe Patron liquor over the cupcake tops which allows it to soak into the hot cupcakes.

Step #9: After the cupcakes have cooled completely, it is time to make the frosting! Combine 1 stick of butter softened, 3 cups of organic powdered sugar, sifted, 1/4 cup Patron XO Cafe, 2 tsp. pure vanilla extract and a pinch of Kosher salt.

 Step #10: After the frosting has been made, put the frosting in a baggie and zip it, THEN cut a small hole in the corner of the bag with some kitchen scissors and frost away!

Step #11: Last but certainly not least, unwrap a cupcake (or two) and enjoy!!
